I use to think plant based meat was healthy. After doing some research, I found grass fed beef is the better, healthier choice. Below you will find some of my recipes I have created. At the time I used plant based meat. Now, I prefer to use grass fed beef.

Tip: Never buy farm fresh shrimp it is filled with chemicals. Always when buying any seafood buy Wild Caught and preferably in U.S.
1 pound of Wild Caught Shrimp, rinsed , peeled and butterflied (cut down the back)
1 package of fresh broccoli , rinsed and chopped up
1 box of Risotto Porcini Mushroom Rice- organic-non-gmo-gluten free (martins)
Added olive oil, water per the box, sprinkled in garlic powder.
Sautee your broccoli until soft, add your rice cook for 20 minutes . Follow directions on the box. Add Shrimp at the end and stir until rice/soft and shrimp pink. Serve. Enjoy!

1 Bag of microwave bag ready of baby red/white potatoes
2-3 Tablespoons of Vegan Butter
2 Tablespoons of Extra Virgin Olive Oil 2
Few Shakes of Garlic Powder
Few Shakes of Onion Powder
Trader Joe's Everything but Elote Seasoning Blend
Salt and Pepper to taste
Handful of fresh parsley cut up
Directions: Heat up potatoes for 6 minutes in the micrawave. Let is cool for a few minutes. Dice up potatoes put in a frying pan and add olive oil, vegan butter and seasonings. Cook for 10 minutes and add parsley at the end. Enjoy! #healthy #vegan #tasty

1 Head of Cauliflower cut up
Franks Hot Sauce
Garlic Powder
Extra Virgin Olive Oil
Gluten Free Flour- I have used many brands. One currently using is GrainFree Paleo Baking Flour by King Arthur-Gluten Free and Non-GMO
Line a cookie sheet with foil drizzle some EVOO onto pan. Add your cauliflower and drizzle over with hot sauce and garlic powder to coat each cauliflower. Bake at 350-375 for about 30-35 minutes. You do not want it crunchy but not too soft. Let cool for few minutes. Then coat each cauliflower with your flour and fry up in EVOO until its brown and crispy. Serve! It is really good! Enjoy! WILD MACKEREL PATTIES
2 cans of wild mackerel - drained
1/3 cup of gluten free bread crumbs
Sprinkle in some old bay
1 tablespoon horseradish
squeeze of lemon or lemon juice
1 tsp Garlic powder
2 tablespoons of flax seed with a quarter cup water(this is a substitute for 1 egg)
(let flaxseed and water sit for few minutes until it becomes thick then add)
Directions:
Mash Mackerel and mix all ingredients together
form into 5-6 patties
add olive oil into your frying pan
place patties into pan
cook on medium heat in pan for about 10 minutes until golden/brown crispy
Serve! (I add little extra old bay on top while cooking)
I like these patties on a gluten free bun with lettuce and horseradish sauce.

Pasta Salad
Dairy-Free Gluten-Free Pasta Salad
9-12oz Box of gluten-free Rotini noodles
1-6oz Jar black olives (pitted)
1/2-7oz Jar of green olives
2 Baby cuccumber(peeled and chopped)
1/2 Red pepper(chopped)
1 Green Onion (peeled and chopped)
Sprinkle garlic powder, parsley, salt&pepper and
EVERYTHING but the ELOTE seasoning blend (from Trader Joe's)
JUST RANCH Dressing (dairy free from Walmart online)
Boil Pasta and drain ...
Place Pasta into a mixing bowl.
Mix in all ingredients into the mixing bowl. Add enough JUST RANCH until creamy. Great for a summer cook out! Enjoy!

12 ounces of dairy free sour cream
8 ounces of dairy free cream cheese
10 ounce jar of artichoke - drained and chopped up
Quarter of a red pepper - chopped up
2 green onions - chopped up
2 garlic cloves - chopped up
1 cup of fresh spinach
1/4 cup vegan parm
Add/Mix all ingredients together in a microwave safe serving bowl
Heat for 3 minutes ... Sea-Salt and Pepper to taste
