Hello welcome to my website and blog. My name is Angie Carr and I want to share my story with you. I have been a nurse for twenty years and I have always been passionate about my health.
I have five auto immune diseases. My first one started when I was twenty five. I have Hashimoto's, Interstitial Cystitis, Psoriasis, Adenomyosis and Rheumatoid Arthritis. I was taking Methotrexate to help manage my Rheumatoid. Before taking medicine, I was in pain all the time. While taking Methotrexate I felt sick all the time. After two years of taking this medicine, I had to stop because my liver enzymes were to high. I went to see a functional medicine doctor who helped me heal naturally.
Over a year ago , I was placed on an elimination diet. I never stopped doing it. I believe our food is our medicine. I went through a period of time of detox to remove the bad food out of my body. Then I started feeling better. I live each day with no pain and have very few flare ups. I am off most of my medicines. I believe the right type of food can heal your body. I mainly eat a plant base diet and some Mediterranean. Once in awhile I enjoy eating raw caught fish and shrimp. I have to avoid dairy, gluten ,processed foods and fast food. My nutritionist told me meat can increase inflammation in the body and raise cholesterol. I eat grass fed meat and organic chicken on occasion. Dairy can produce excess mucous in the body and gluten can be harmful for anyone that has auto immune diseases. From what I have read, processed foods and fast food can have harmful chemicals which can hurt your body over time.
This is my testimony and has worked for me. I am not telling you to stop taking your medicines. Please consult your doctor for your plan of care. It is my passion and mission to help others by showing that our diet and as well as a living a healthy lifestyle can help your body heal naturally.
When shopping at the grocery store it can be overwhelming. A lot of times we are all short on time and want to get in and get out. I remember when I switched to a plant base diet, I was overwhelmed on what to buy. I stood at the produce aisle and gluten free/organic aisle for hours reading labels to see what is clean and healthy.
My functional medicine doctor put me on an elimination diet. I had to cut out gluten, sugar, caffeine, dairy, processed foods including meat and fast food. This was a huge shock to me and my family. What do I eat? I started to look up recipes that I could eat and challenged myself of making 3 or 4 new meals each week. Also bought new things I knew were good for me and started creating recipes on my own. I try to use fresh herbs when cooking and fresh vegetables. I do grow some of my own herbs/vegetables.
I get excited when I go shopping because I am looking for the best deal and I love trying new things. I love to post my finds and share them. I shop everywhere! My favorite stores are Aldi's, Martins, Trader Joe's, Whole Foods and Costco.
